Dafermou – Yiannoudi
Introduction
Follow your senses in Dafermou – Yiannoudi. It is the grape variety that inspired the journey, a local variety from Limassol, dry-farmed on our vines and fermented on indigenous yeasts. Further more, it is this wine, aged for 12 months in a combination of French and American oak barrels, that best represents the ancestral winemaking tradition of our winery. Appearance
Deep red in the glass, a collection of dark red hues, it’s richly coloured and this is a hint of the richness and depth you will discover in the glass, savouring its multifaceted character. Indeed Dafermou – Yiannoudi at it is finest.
Aroma
Your cerebral cortex will swoon at the scent of Dafermou – Yiannoudi, a bouquet of berries and cherries, fragrant sweet herbs, and nuanced nuances come through. Finally, the scent is a preview of the velvety, supple, sensuous wine in the glass.
Taste
Silky tannins on the palate, through a judiciously high acidity makes it a fine wine, and a finely judged one too. The laurel flavour is powerful, a certain salty melancholy, but it is not overpowering – it contrasts with the other flavours that make for a complex whole.
Pairing
Great with everything, from starters to meats Dishes of roast pork, lamb, Red mullet, smoked salmon Can also work with vegetarian dishes and cheese works well with green salads, dishes with arugula or other bitter greens, and salads with tuna and taramosalata works well with fish, pasta, shellfish and other light seafood.
